Did you know that pesto is just nuts + greens + garlic + seasoning? So simple!
Ingredients
- Choose any soft nut – pine nut, walnut, or pistachio
- Choose greens – basil, spinach, kale
- Garlic is a must!
- Olive oil
Steps
- I chose a handful of walnuts + 2 cups spinach kale mix + 3 cloves garlic
- Place all ingredients into a food processor and chop until walnuts, greens, and garlic are minced up
- Season with just salt and pepper or add some oregano, red chili flakes, or vegan parmesan
- I add 1 tsp of oil to the mix in order to be able to handle it just enough to spoon it into a jar. Once in a jar, I poured olive oil to cover the mix which was just enough for the perfect consistency

TIPS
Save your glass jars! My old pesto and tamponade jars were perfect for my very own homemade pesto.
Don’t stress about having the perfect ingredients. Surely you have some type of nut and greens on hand or can easily obtain a readily available combination. That’s all it takes! Pine nuts are expensive and definitely not imperative.
I purposely kept it simple with just salt and pepper and left out any spices so that I could sprinkle this over already spiced/seasoned veggies or flatbread.
