I work through the holidays so loaded up on some greens and beans to do my meal prep. I love warm bowl meals in December. A green, a bean, a grain, and some spices, is all you need. Cooked veggies can be added as well. Here is the shopping list. Check the blog for updates with recipes. I consider these single pot meals as only the grain is cooked separately and the grains can be cooked as one large batch and then added to each of the dishes. Even leftover cooked grains can be used. I made these all in one day.
