Meal prepping for the week with greens and beans and grains.
Ingredients
- Collard Greens
- White Beans / Great Northern Beans / Cannellini Beans
- Coriander / Cilantro
- Quinoa
- Salt
- Pepper
- Cumin
- Red Chili Powder
- Minced Garlic
- Red Pepper Flakes
- Nutritional Yeast
Steps
- Heat 1 Tbsp avocado oil in a pan
- While oil heats, cut collard greens (Five large leaves gives about five cups of chopped greens)
- Add the collard greens and 1 Tbsp minced garlic to the oil and heat until greens cook down (About 8 minutes). Season with 1 tsp salt, 1/2 tsp black pepper, 1 tsp cumin powder, and 1/4 tsp red chili powder. Heat for additional 3 minutes until spices are fragrant.
- While collards cook, roast your veggies. I chopped up a cauliflower and seasoned it with olive oil, cumin, red chili powder, and pepper. Add salt last once roasted if needed. For two cups of chopped cauliflower, use 1 Tbsp olive oil, 2 tsp cumin, 1/2 tsp chili powder, toss together, place on baking sheet, bake at 400F for 12 minutes.
- Add 1 can of rinsed white beans to the greens. Mix through. Smash down about 1/6 of the beans. Add 1/4c water (this helps thicken the mix and further steams the greens through). Add 2 Tbsp nutritional yeast.
- Add chopped cilantro (about 1 Tbsp chopped). Mix and heat through another 2 minutes.
- Serve with cooked quinoa and roasted cauliflower
- I save one serving to take to work for lunch and the other portion to freeze.

TIPS
To cook quinoa, rinse 1c quinoa. Add 2c water to the rinsed quinoa. Bring to a boil while uncovered. Lower heat to simmer. Cover. Simmer for 20 minutes. Serve with a greens & beans mix. This much quinoa would provide about four servings.
Alternate way to cook quinoa is with the greens. Add greens and garlic to oil, heat for about four minutes. Add 1/2 c water and 1/4 rinsed quinoa. Bring to boil. Simmer covered for 15 minutes. Add beans seasonings. Add another 1/4c water. I made batches of different greens & beans mixes so I cooked the quinoa separately.
