Greens + Beans + Grains Bowls

I work through the holidays so loaded up on some greens and beans to do my meal prep. I love warm bowl meals in December. A green, a bean, a grain, and some spices, is all you need. Cooked veggies can be added as well. First recipe will be posted tonight!

Greens

  • Collard Greens
  • Kale
  • Spinach

Beans

  • White Beans
  • Red Beans
  • Chickpeas

Grains

  • Quinoa
  • Farro
  • Brown Rice

Vegetables/Herbs

  • Cauliflower
  • Sweet Potaoes
  • Onion
  • Cilantro

  1. Collard Greens + White Beans + Quinoa or Brown Rice + Roasted Cauliflower (recipe link)

Bonus Meal

With the extra portions, I combined leftover roasted cauliflower, sweet potato, fresh kale, and some cooked cabbage slaw for a salad.

I divided each dish in half. One serving for lunch to take to work and the other to freeze. Mostly, I am just interested to see how well these freeze, thaw, and reheat.
