Combine the following into a food processor: four shallots, eight garlic cloves, two Serano peppers, two red chilies, 1/2 c sliced lemongrass, six Thai basil leaves, leaves of half a bunch of cilantro — chop finely in food processor.
To use in a dish, heat up 2 Tbsp paste in a heated pan. Then add 2 c broth or coconut milk to create the curry base. Bring to boil. Add cooked veggies and fresh noodles, cook for another 2-4 minutes, and enjoy! — Alternatively, noodles can be cooked separate and the vegetable curry mix can be added over the noodles or some rice.
