Thai Green Curry

Ingredients

  • Garlic cloves
  • Lemongrass
  • Green chilies
  • Thai chilis
  • Shallots
  • Miso
  • Galangal Powder
  • Turmeric powder
  • Cumin powder
  • Coriander powder
  • White pepper
  • Sea salt
  • Lime
  • Thai basil leaves
  • Coriander leaves
  • Olive oil

Steps

  1. Combine the following into a food processor: four shallots, eight garlic cloves, two Serano peppers, two red chilies, 1/2 c sliced lemongrass, six Thai basil leaves, leaves of half a bunch of cilantro — chop finely in food processor.
  2. Add to food processor chopped ingredients: 2 Tbsp miso, 2 Tbsp lime juice, 2 Tbsp olive oil, 2 Tbsp galangal powder, 1 Tbsp coriander powder, 1 Tbsp cumin powder, 2 tsp sea salt, 1 tsp turmeric powder, 1 tsp white pepper, 1/2 tsp sugar – puree into a paste
  3. To use in a dish, heat up 2 Tbsp paste in a heated pan. Then add 2 c broth or coconut milk to create the curry base. Bring to boil. Add cooked veggies and fresh noodles, cook for another 2-4 minutes, and enjoy! — Alternatively, noodles can be cooked separate and the vegetable curry mix can be added over the noodles or some rice.
