Place 6 garlic cloves in food processor and chop through
Add 1/2 c walnuts and chop through
Add 3 c basil leaves and 1/4 c olive oil and chop through, you can do puree but not necessary
Add 3 Tbsp nutritional yeast, 2 Tbsp water, 1/2 tsp salt, and mix through (I use chop setting)
I then cooked some Beyond Meat Meatballs on a pan. Once cooked through, I added about 2 Tbsp of the pesto sauce to it to let it marinate. Covered and waited for pasta to bed done.
Add drained cooked pasta to the meatballs (reserve some of the pasta water). Add the pesto sauce mix. Add 1/4c pasta water. Heat through. Season with salt and pepper to taste. I also added red pepper flakes and vegan parmesan. Mix through. Serve immediately!
