Pesto Pasta

Ingredients

  • Fresh Basil
  • Walnuts
  • Garlic
  • Olive oil
  • Nutritional Yeast
  • Sea Salt
  • Rotini or Bowtie pasta
  • red pepper flakes
  • black pepper
  • vegan parmesan
  • vegan meatballs

Steps

  1. Cook pasta while preparing pesto sauce
  2. Place 6 garlic cloves in food processor and chop through
  3. Add 1/2 c walnuts and chop through
  4. Add 3 c basil leaves and 1/4 c olive oil and chop through, you can do puree but not necessary
  5. Add 3 Tbsp nutritional yeast, 2 Tbsp water, 1/2 tsp salt, and mix through (I use chop setting)
  6. I then cooked some Beyond Meat Meatballs on a pan. Once cooked through, I added about 2 Tbsp of the pesto sauce to it to let it marinate. Covered and waited for pasta to bed done.
  7. Add drained cooked pasta to the meatballs (reserve some of the pasta water). Add the pesto sauce mix. Add 1/4c pasta water. Heat through. Season with salt and pepper to taste. I also added red pepper flakes and vegan parmesan. Mix through. Serve immediately!
