Creamy Garlic Hummus

Ingredients

  • chickpeas
  • lemon juice
  • tahini
  • olive oil
  • ice cold water or ice cubes
  • cayenne

Steps

  1. Rinse and drain one can of chickpeas in cold water. As you rinse, pinch of as much of the skin from each chickpea as possible.
  2. Add the chickpeas to a pot and add water until chickpeas covered with addition 1-2 inches of water above the layer of chickpeas. Add 1/2 tsp baking soda. Bring to boil.
  3. Once the chickpeas are boiling, cover and reduce to a simmer and cook for 20 mins
  4. Meanwhile, add 4-6 garlic cloves in a food processor and mince through. Add 1/4 c lemon juice and 1/3 c tahini and puree until creamy. Add 1/4 c olive oil and puree further.
  5. Once chickpeas cooked through, drain and rinse with cold water. Add to food processor. Puree through for 1-2 mins. While still pureeing, slowly add ice cold water or cubes of ice 1 Tbsp or 1 ice cube at a time (I used a total of 3 Tbsp water)
  6. Open up the food processor and you will find the creamiest most beautiful and delectable hummus.
  7. Spoon out onto dish. Drizzle with olive oil and sprinkle cayenne and any other spices you desire.
  8. Enjoy with some pita, sweet peppers, or in a sandwich or wrap.
