(1 flax egg = 1 Tbsp ground flaxseed + 3 Tbsp warm water, let stand 15 minutes)

Steps
Sift dry ingredients: 1 c whole wheat flour + 1/2 c almond flour + 1 tsp baking soda + 1 tsp baking powder + 1/2 tsp salt + 1/4 c brown sugar
Whisk together wet ingredients: 2 medium sized bananas (mashed) + 1/3 c oil (olive or coconut) + 1/3 c oat milk + 1 tsp vanilla extract + 2 flax eggs
Mix wet and dry ingredients together
If desired, add 1/4 c cocoa powder to the mix and/or 1/4 – 1/2 c chocolate chips — I made a mixed batch of plain, chocolate chip, and double chocolate chip muffins
Spray or brush oil into muffin pan wells
Scoop 1/4 c mix into each muffin pan well
Bake at 350ºF for 16-26 minutes
(check muffins for doneness after 12 mins, and then 3-5-minute intervals after that)
