These were literally thrown together and I even had run out of baking powder (did not know that could happen) so I improvised. These still turned out amazing and just as good as when I have made them in the past. Adapted from @ambitiouskitchen
Ingredients
- Black Beans
- Avocado
- Ground Flaxseed (for flax eggs*)
- Coconut Oil
- Vanilla Extract
- Espresso or Instant Coffee
- Brown Sugar
- Cocoa Powder
- Baking Powder
- Baking Soda
- Salt
- Cinnamon
- Chocolate Chips
*To make a flax egg, mix together 1 Tbsp ground flaxseed + 3 Tbsp warm water, and let stand until it thickens (~15 mins is ideal)
Steps
- Into a food processor, add 1c black beans (rinsed and drained), 1 small avocado, 2-3 flax eggs, 1 Tbsp melted coconut oil, 1 tsp vanilla, 1 Tbsp espresso or coffee (cooled), 1/2 c brown sugar, 1/2 c cocoa powder, 1/2 tsp baking powder, 1/4 tsp baking soda, 1/4 tsp salt, 1/4 tsp cinnamon
- Puree
- Fold in chocolate chips
- Pour into an oiled baking pan (I lightly coat with olive or avocado oil)
- Top with chopped walnuts or more chocolate chips
- Bake at 350ºF for 22-28 minutes

TIPS
These turned out super moist which I love but if you like a firmer cakey brownie, definitely add an extra flax egg, it likely will not make it too cakey.
Baking POwder substitute (1 TSP equivalent):
1/4 tsp baking soda + 1/2 tsp vinegar (i used acv)
